Kombucha is becoming one of the most appreciated and popular alternatives to classic fermented drinks of Western culture, such as wine and beer, due to its low alcohol content, delightful taste, and remarkable versatility. In fact, these fermented teas can be paired with various types of culinary dishes but are also suitable to be enjoyed on their own as a refreshing aperitif.
Ama Brewery Pet-Nat Tea ‘BOST’ comes from the union of water from the Izarraitz Massif spring in the Basque Country and Jasmine Silver Needle tea. This type of tea is part of the history of the Fuding prefecture in the Chinese province of Fujian and has been so sought after that its consumption was exclusive to the imperial family for a long time. In the making of the Tea ‘BOST’ only the buds and the tenderest spring shoots are collected, and at night the tea is laid on bamboo trays and then covered with a layer of jasmine flowers. The next morning, the flowers are removed and replaced with a new fresh layer, in a process that is repeated for 6 nights to infuse the tea with the sweet scent of jasmine. After infusion and fermentation, this kombucha rests for 6 months in the bottle before being released on the market.
