The vineyards are conducted with extreme care, following the principles of biodynamic agriculture, without any use of chemical preparations. The harvest is done by hand and the Merlot grapes are spontaneously fermented with indigenous yeasts in cement tanks with a brief maceration on the skins, in order to achieve a delicate extraction. Before bottling, the wine matures for a few months in cement.
