The Sancerre "Les Romains" from the Domaine Fouassier winery is a fresh, fragrant, and mineral white wine produced in Sancerre, in the Loire Valley, a French region characterized by a continental oceanic climate with high rainfall. It is made from pure Sauvignon grapes sourced from vineyards about 30 years old, trained on trellises, using the simple guyot pruning method, on south-west facing hills characterized by soils rich in siliceous clays. The winery, owner of about 56 hectares of vineyards managed according to biodynamic philosophy, is one of the oldest family-run businesses and one of the most expressive of the typicities of this territory.
The "Les Romains" Sancerre from Fouassier is produced with hand-harvested grapes carefully selected towards the end of September. The bunches, brought to the winery, undergo gentle destemming and pressing and are decanted for 1/3 days, before undergoing alcoholic fermentation, which occurs spontaneously using only indigenous yeasts, in stainless steel containers of 30/100 hectoliters for a few weeks. Subsequently, the wine remains in refinement on its fine lees, in the stainless steel containers where the alcoholic fermentation took place, for about 8/12 months.
The Sancerre "Les Romains" from Domaine Fouassier presents itself with a bright straw-yellow color. On the nose, intense aromas of stone fruits with white and yellow flesh appear, including peach and plum, citrus and floral notes of white flowers, hints of aromatic herbs, including sage, and minerals of wet rock. On the palate, it is meaty, broad, rich, and elegant, characterized by a lively mineral acidity that provides freshness, and by chalky, spicy, and citrus notes that fade into a long finish. This Sancerre from Domaine Fouassier is a truly expressive, pure, and intense white in its slender refinement that captivates until the last sip.
