The Sauvignon of Ca’ d’Gal is a fresh and aromatic white from Piedmont, produced in the Calamandrana vineyard in the heart of Monferrato Astigiano. The grapes are brought to the winery for a soft pressing, while fermentation takes place in autoclave and aging continues in the same material with contact on the fine lees until the spring following the harvest. On the nose, a defined herbaceous profile emerges with notes of crunchy white fruit and clear vegetal nuances. On the palate, it shows a full and enveloping structure, while also being fresh and savory. Perfect paired with lemon risotto and wild field herbs
