The “Segreto” of Cascina Ebreo is a red of rare personality that, once tasted, is hard to forget. We are light years away from easy-drinking red wines meant for everyday consumption; the “Segreto” has substance and personality, making it full-bodied and structured. The Ebreo Winery is located in the Langhe, the birthplace of Barolo wine production. It is a small estate of just over 2 hectares, representing the dream of Peter Weimer and Romy Gygax, the owners of the winery, who began their adventure in the wine world in the 1990s. Their expression stems from the desire to bring back to the Piedmont lands the tradition of great red wines, following a production philosophy focused on minimal intervention in the cellar and among the vines.
The red wine “Segreto” is the first label historically produced by the winery, made from the red grapes of a small plot of just over half a hectare, facing east and rooted in prized calcareous-clay soils. After manual harvesting, the grapes ferment with indigenous yeasts and maceration on the skins lasting about three weeks. After maturation, it is bottled without filtration.
The red “Segreto” of Cascina Ebreo amazes with its structure, complexity, and aromatic depth. It is a label that captivates with the rigor and passion with which it is made, through absolutely artisanal processes and without the need for particular treatments in the cellar. In the glass, it has a ruby red color with characteristic violet reflections. The bouquet fascinates with the elegance and nuances of the aromas, ranging from fruity notes to spicy and oaky sensations, to balsamic hints. On the palate, it releases its enveloping warmth, richness of fruit, and complexity, with a finish characterized by typical freshness.
