The “Soffocone di Vincigliata” by Bibi Graetz is a red wine that is enjoyed with great pleasure, never becoming tiring for those who find it on the table, but rather always proving to be punctual and precise. It is undoubtedly an intense and full-bodied product, in which Sangiovese is the undisputed protagonist of the final blend with a personality that comes alive in a perfectly enveloping sip. A label that pairs well with great red meats and game dishes.
This red “Soffocone di Vincigliata” is born from a blend crafted by the Bibi Graetz winery where, alongside 90% Sangiovese, we also find small percentages of Canaiolo and Colorino, indigenous grape varieties of Tuscany. The vines of these three varieties are about 40 years old and grow using the guyot training system, rooting in soils rich mainly in clay and galestro. The fermentation of the must takes place in steel tanks for about ten days, during which various manual punch-downs occur. The final aging lasts for 15 months and takes place in French oak barriques. At the end of maturation, bottling and marketing operations are carried out.
The “Soffocone di Vincigliata” Bibi Graetz develops in the glass with a ruby red color, characterized by a brilliant light. Rich and concentrated on the nose, where the fruit announces itself first with intense notes, then giving way to floral sensations, spicy notes, and hints that recall aromatic herbs. With excellent body, it envelops the palate with a full and round sip thanks to a finely crafted tannic structure; it has a taste that, in the finish, recalls a slightly toasted flavor. A Tuscan red that, over the years, has managed to earn an important place critically.
