The Sparkling sui Lieviti “Agricolo Ancestrale” Casa Costa Signor by Maurizio Donadi is an energetic and refreshing white wine. The winery operates in the province of Treviso, in the Prosecco region, and mainly works with local native varieties. Production follows an artisanal approach, without clarification or fining and, in many cases, without disgorging, so as to keep the yeasts inside the bottle and make the wine smooth on the palate. Alcoholic fermentation takes place with indigenous yeasts and is completed in an autoclave until a pressure of 5 bar is reached. The bouquet is fruity and floral, with hints of dried fruit and light notes of yeast on the finish. On the palate, it is velvety and creamy, supported by a lively freshness and a persistent perlage. Excellent paired with a risotto with asparagus
