Organic Wine
The Syrah “Fondo Filara” by Cantine Nicosia is a young and pleasantly fruity version of this extraordinary red grape variety originating from central Europe, which in the Rhône Valley produces wines of the highest quality. In Sicily, it has found a second home for centuries, thanks to its suited lands and a particularly favorable climate, sunny and always well-ventilated. It is an intense and Mediterranean red, expressing classic varietal aromas with elegant expressive clarity. It pairs excellently with grilled meat, game dishes, or slightly spiced red meat mains.
“Fondo Filara” is a Syrah that comes from vineyards managed under organic farming practices within the estate of Cantine Nicosia. Besides the Etna area, the famous Sicilian brand owns vineyards in various regions of Sicily, where it cultivates the main native grape varieties and international varieties that have best adapted to the different terroirs of the island. The Syrah is grown at an altitude of 200-250 meters above sea level, on soils predominantly composed of sands, which have proven particularly suitable for this noble French grape variety. At the end of the harvest, fermentation takes place at a controlled temperature of 24-26 °C, with a maceration on the skins of about fifteen days. The wine matures first in steel and then for 5-6 months in barrique. It completes the aging with 4 months in bottle.
The red Syrah “Fondo Filara” Cantine Nicosia is a beautiful version of this famous French grape variety with an unmistakable personality, which can be summarized in the pairing: exuberant fruit and spices. The brief passage in wood softens its youthful edges, always keeping its typically varietal character in the foreground. In the glass, it presents an intense purple-red color with slight violet reflections. The aromatic profile is fascinating, characterized by notes of black currant, blueberry, dark berry fruits, berry jam, soft aromas of oriental spices, aromatic herbs, and a sharp touch of black pepper. On the palate, it has a good structure, with a dense tannic weave, rich and broad fruity aromas. The finish is harmonious, balanced, with a pleasantly spicy closure.
