
White 'Togo' Il Ceo 2022

This is a rustic wine with character, reflecting the reality of its production. The nose reveals fresh aromas of flowers and white fruit, with pleasant iodine notes that recall the great sapidity of the sip. On the palate, it's fresh, clean and of good intensity, so crisp it's reminiscent of fresh fruit!
The Bianco ‘Togo’ from the artisanal winery Il Ceo in Veneto is a label of great authenticity that stands out for its light and crisp flavor. Among the white grape varieties cultivated by Davide Andreatta, the winemaker and owner of the Breganze territory Il Ceo, are local grapes such as Vespaiolo and Pedevenda. As can be easily inferred from the name, the term Vespaiolo refers to wasps, insects particularly fond of this sugary grape usually harvested late. In fact, Vespaiolo is often used in the production of sweet late-harvest wines. Pedevenda, on the other hand, represents a very rare variety, listed among the old forgotten grape varieties of Veneto, particularly from the province of Vicenza, which has also been traditionally used for passito wines.
The Ceo Bianco ‘Togo’ is made from a blend of white grapes cultivated according to the principles of biodynamic agriculture. After the harvest, which is carried out strictly by hand, the bunches are transferred to the winery where they are carefully selected and then manually destemmed on special racks. The subsequent alcoholic fermentation occurs completely spontaneously thanks to indigenous yeasts in stainless steel tanks, the same type of wine containers where the maturation phase of about 12 months takes place before the final bottling, which is done without prior filtration or clarification.
The ‘Togo’ Bianco from the Il Ceo estate is of intense straw yellow color. On the nose, delightful aromas of jasmine, wildflowers, and pear follow one another, alternated with evocative hints of yeast and iodine. The tasting reveals a rustic character, marked sapidity, and pleasant crispness, with a light and vibrant finish that impresses with its pronounced final freshness.
