“Ypsilon” from the Sicilian winery Tenuta di Castellaro is a fragrant and fruity red wine, with a typically Mediterranean profile, produced on the island of Lipari. It is made from a blend of three grape varieties typical of the area: Nero d’Avola, Corinto, and Alicante, grown in volcanic soils rich in minerals. The exclusive use of stainless steel for vinification allows for the full appreciation of the grapes’ ripeness, resulting in a crisp and aromatic sip. It is a wine of great freshness, harmonious and elegant, captivating with its immediacy and ease of drinking.
The red “Ypsilon” is born in the stunning natural setting of the island of Lipari. Tenuta Castellaro owns about twenty hectares, of which approximately half are planted with vines, divided into small plots located in various areas of the island: Vigna Maggiore, Lisca, Lisca Alta, Caolino, and Gelso. The Mediterranean climate, always breezy, and the volcanic soils have proven perfect for producing wines with a strong territorial character. The cultivation of indigenous grape varieties and a great respect for the raw material, allows for the production of excellent labels that manage to convey the unique character of this small corner of Sicily.
The wine “Ypsilon”, produced by the Sicilian winery Tenuta di Castellaro, is the result of an ambitious project to create a red wine capable of representing and synthesizing the best qualities of the Lipari terroir. Not a single-varietal wine, which can be overly characterizing, but a blend of grapes that brings forth an overall image of the personality of this small volcanic island in the Aeolian archipelago. The grapes come from gobelet-trained vines cultivated at about 350 meters above sea level on sandy soils. Fermentation takes place in stainless steel tanks with only indigenous yeasts. It then matures for 12 months in steel tanks before bottling. It presents an intense purple-red color. The bouquet recalls fragrant aromas of cherry, small berries, aromatic herbs, delicate and soft spices. The sip is pleasantly fruity, rich, and harmonious, with a fresh and savory finish.
