Produced with Pinot Noir and white Burgundy grapes, the latter mature in used barriques while the red mass undergoes a carbonic maceration, which enhances the fruity aromas: raspberry and strawberry strike the nose, while on the palate the ease of drinking soars. The “A-Miami Vice” by Domaine Ami is born in Burgundy thanks to the meeting of two young enthusiasts of the world of viticulture who decided to cooperate to produce artisanal and quality wines: AMI is precisely the reservoir of a seductive, generous and rich wine full of meaning. Willy and Paul are first and foremost two friends: the former studied and worked in Burgundy to refine his knowledge of Mediterranean wines; the latter, on the other hand, invested in his training in the art of tasting. Today they cultivate about 3 hectares in the Maranges area where the most famous native grape varieties are born.
The Pinot Noir, Aligoté, and Chardonnay grapes of the “A-Miami Vice” by Domaine Ami are cultivated with great attention to detail, choosing to focus on a limited production, but of excellent and unparalleled quality. The choice was made to focus on organic farming, in order to limit the use of pesticides, herbicides, and chemical substances, favoring minimal human intervention and respect for the natural stages of development. The climate is continental with hot and sunny summers and cold winters with potential frosts lurking. The harvest of the grapes is manual and in the cellar there is an alcoholic fermentation with indigenous yeasts in wood for the white grapes and a carbonic maceration in steel for the red grapes. It ages for a few months in steel before being bottled without any filtration.
The “A-Miami Vice” by Domaine Ami presents itself in the glass as a ruby red with soft and bright reflections. The bouquet of aromas recalls berries such as raspberry and strawberry before shifting to red apple; on the palate the structure is characterized, aromatic and with extreme drinkability, inviting glass after glass. It pairs perfectly with warm appetizers based on shellfish and mollusks, first courses based on vegetables and with important sauces; interesting also with aged cheeses. A wine with authentic and genuine flavors that cannot be missing in the personal cellar to share it at the family holiday table and enjoy all the authenticity of Burgundy.
