Fabbrica di San Martino's White is an artisanal wine from the hills of Lucca. La Fabbrica is one of the most representative biodynamic wineries in the hills of Lucca and follows a philosophy of minimal intervention. The wine ferments in old tonneaux, virtually neutral containers that allow fruit and roundness to be extracted. The nose is intense, with hints of ripe fruit and herbaceous notes, while the palate is textured but not overly full-bodied, savoury and taut. It pairs naturally with fish and vegetable dishes, such as legume soup or stewed salt cod
