The “Cattabrega” from Podere Sottoilnoce is nothing but a tasty and smooth sparkling rosé, an ideal effervescent juice of the Modenese tradition, a stronghold of its territory and the perfect gastronomic companion for any snack based on Emilian gastronomic products. It mainly consists of red grape varieties with a small quantity of white grapes, distinguished by its resistance to climatic adversities and especially for its particular vocation to grow in hilly environments. The peculiarity from which it derives its name is quite curious: in autumn, not only the leaves turn red, but also the stems and petioles, hence the related nickname graspa-rossa. Also interesting is the motif on the label, a true declaration of intent, representing the animal biodiversity of the place and the spontaneity of nature.
Max Brondolo vinifies his “Cattabrega” precisely in the municipality of Castelvetro, the birthplace of Lambrusco Grasparossa, in the new Podere Sottoilnoce, proudly reviving the refermentation techniques that have always beencharacteristic of the sparkling Emilian terroir: this Cattabrega, like the entire line offered by Max, undergoes bottle refermentation according to the dictates of the ancestral method, which consists of bottling during the first winter chills with a slight percentage of sugar not fermented. This slight residue present will reactivate the spontaneous yeasts contained within the bottles, thanks to the warmth of spring, allowing them to undergo a second fermentation that will ultimately provide effervescence and creaminess.
The “Cattabrega” sparkling rosé from Podere Sottoilnoce presents itself in the glasses with a brilliant coral color, expressive of delicate and varietal aromas such as red blueberry, raspberry, and wild strawberries. It then evolves into inviting notes of fresh flowers and beer yeast, before culminating in a refreshing and tonic sip, with creamy effervescence and persistent salty balance.
