The Coenobium is a fresh white wine, easy to drink and pleasantly rustic produced by the Trappist nuns of Vitorchiano from typical white grapes of the area. It has an agile and refreshing profile, savory and mineral with aromatic notes of hay, wild herbs, humus, and ripe white fruit. An ode to cenobitic and communal life!

Coenobium is an expressive and captivating white wine, produced at the Monastery of Vitorchiano by the Trappist nuns, respecting ancient and traditional methods. The nuns have managed this monastery in Alto Lazio since 1957 and have sustained themselves by selling jams, vegetables, oil, and wine. From the collaboration with Giampiero Bea and following the ecological vision of Pope Francis's encyclical Laudato si’, two white wines with a pleasantly rustic profile were born, embodying the humble, simple, and communal lifestyle of the Monastery.

The Trebbiano, Malvasia del Lazio, and Verdicchio grapes used to produce Coenobium white wine come exclusively from the Monastery's vineyards, rooted in a rocky magmatic soil called peperino and cultivated without invasive treatments. The production process involves a spontaneous fermentation with indigenous yeasts and a brief rest on fine lees, without forced stabilization. This results in a sincere and expressive territorial expression, variable depending on the vintage but always characterized by good freshness and great drinkability.

Coenobium Bianco is a hymn to simple and rustic life, to the joy of being together with friendship and a spirit of sharing. In the glass, it presents a straw yellow color and a slight haze due to the choice not to subject the wine to invasive filtration. On the nose, marine and mineral notes emerge, combined with a delicate complexity of wild herbs, field flowers, hay, ripe pears, yeasts, and humus. The sip reveals freshness, dynamism, agility, and minerality, and tells, without filters or artifice, the laborious and contemplative synergy between the Trappist nuns and the terroir of Alto Lazio.
