The production reality of Vallein Tercinier presents its Cognac Premium Selection VS, a label with a fresher and more accessible style that reflects the character of VS Cognacs. The acronym 'VS' stands for “Very Special” and identifies those Cognacs produced through aging of at least 2 years in wooden barrels for the youngest eau-de-vie present in the blend. It is precisely the maturation in barrel that represents a key step in determining the quality and personality of the distillate. In fact, during this phase, the Cognac acquires its characteristic brown amber color and its boisé aromas, simultaneously softening the youthful roughness. During the time in wood, a significant portion of the liquid is then lost to evaporation, and this quantity is known as “Part des Anges”, meaning the “part of the angels”.
The Cognac VS Premium Selection by Vallein Tercinier is made from a predominance of Ugni Blanc grapes grown within the crus of Fins Bois and Bons Bois, areas characterized by a strongly Atlantic climate. After the harvest, the bunches undergo a soft pressing operation, and the must then undergoes spontaneous alcoholic fermentation for a period of 2-3 weeks. Once the fermentation process is complete, the wine is distilled twice in copper stills, and the liquid obtained is exclusively directed into oak barrels for aging, which lasts at least 3 years for the youngest eau-de-vie that will be part of the final blend.
The Cognac VS Premium Selection Vallein Tercinier presents itself with a bright amber hue. The nose offers hints of ripe fruits accompanied by toasted notes. Powerful yet lively on the palate, it has excellent freshness and a prolonged taste persistence.
