Organic and biodynamicThe "Cumalè" by Casebianche is a Fiano of peasant character and Mediterranean pleasure produced in Cilento from grapes coming from the large vineyard. A juice of agile and captivating drink that smells of white apple, pear, and hazelnuts, animating a thin and balanced sip, supported by a good acidic backbone and a consistent savory finish.
The “Cumalè” is a Fiano that tells the beauty of the white wines from Campania made in the Cilento area. It is a simple and immediate label, where aromas and flavors unfold on the palate and nose with delicacy, highlighting a linear profile. It is the minerality on the palate that enhances a drinkability that, due to a pronounced savory component, pairs well at the table especially with recipes based on shellfish and seafood, typical of Southern Italy. A bottle signed by Casebianche that undoubtedly deserves more than just one tasting.
This “Cumalè” is a pure Fiano, a white grape variety that in the Campanian terroir finds that expressiveness that makes it one of the most interesting varieties in the regional ampelographic landscape. It is cultivated in vineyards located near Torchiara, following organic farming practices. The terroir, of medium texture, is characterized by the presence of clay and limestone. The must ferments spontaneously thanks to the presence of indigenous yeasts, performing a skin maceration for 3 months. The wine remains to age on the lees for 6 months in steel tanks, and after bottling, before being put on the market, another three months of maturation take place directly in glass.
The Fiano “Cumalè” presents itself visually with a typical straw yellow color, crossed by slight flashes more tending to golden, visible with greater ease at the rim. The nose is dominated by various fruity expressions, which are also enriched by a hint of almond and hazelnut. On the palate, it is light-bodied, with a sip characterized by a beautiful savory progression, which makes the drink decidedly smooth. A label signed by Casebianche that finds its gastronomic consecration in pairing with recipes based on fish, shellfish, and seafood.
