Jérôme Galeyrand's Fixin 'Champs de Vosger' is a fine, smooth Burgundy from a small appellation in the Cote des Nuits. It comes from sandy soils below the commune of Fixin, cultivated using organic and biodynamic practices and manual labour. The vinification favours destemming and ageing in small barrels with minimal new wood, enhancing lightness and drinkability. The nose opens with small red fruits and flowers and evolves into pleasant herbaceous notes. On the palate, it is silky and fluid, with fine tannins and a tense but composed mouthfeel. Ideal with delicate roast meats
