It is part of a collection of labels from an innovative line, created to satisfy enthusiasts who seek not only quality wines but also those resulting from production processes that respect the environment and biodiversity. Produced from organic farming and minimal cellar practices, it allows for a white of great expressive purity, capable of highlighting the best varietal characteristics of the grape.
The "Bio Vegan" Grillo from Cantine Nicosia is made with grapes from vineyards cultivated on medium-textured soils, predominantly clay-based. The dry and breezy climate, mitigated by the presence of the gentle sea breezes, allows for the maturation of grapes with very rich aromas. The management of the vineyards is done in full respect of the natural environment. Between the rows, the principles of nature-respecting agriculture are applied, using only sulfur and copper in low quantities. The grapes are harvested manually between the end of August and the beginning of September. After soft pressing, the fermentation phase begins, which takes place in stainless steel tanks at a controlled temperature of 15-18 °C. The wine matures in steel tanks for a few months and finishes aging in the bottle.
