The nine hectares of vineyards are located in a hilly area characterized by predominantly limestone soils and a mild, breezy climate. The harvest is carried out manually between the end of September and the beginning of October. The best bunches selected directly in the vineyard undergo a cold maceration to extract perfumes and aromas. Fermentation then takes place in temperature-controlled steel tanks.
