Lambrusco di Sorbara 'Vigna del Cristo' Cavicchioli 2023
Lambrusco di Sorbara “Vigna del Cristo” by Cavicchioli is a very fresh and vibrant semi-sparkling wine with a typical bright rosé color. It springs out perfumes of rose petals, violets, orange and wild strwberries. The taste is very fresh, taut, savory, dry, harmonic and balanced
Lambrusco di Sorbara “Vigna del Cristo” by Cavicchioli draws from the tradition of Emilia's sparkling wine, broadening horizons to a national and international dimension. The Cavicchioli family has cultivated a passion for Lambrusco since the early 1900s, stemming from Umberto's strong bond with his land, seen as a source of wealth. The desire to wisely produce wines from the territory has been passed down to subsequent generations, who further enhance the name of the winery in the Modena area. The key has always been pleasure: both the pleasure of making wine by the family and that of consumers in drinking it.
Cavicchioli Lambrusco “Vigna del Cristo” is made from the same grape variety in purity. The vineyards cover an area of 5 hectares in Sorbara, in the locality of Cristo, about twenty kilometers north of Modena city. The soil is characterized by being sandy and notoriously very fertile, close to the Secchia river. The harvest is manual and takes place between late September and early October. The grapes undergo cryomaceration for 2-3 days at low temperature, before moving on to the fermentation phase with selected yeasts for 10-12 days at a constant temperature between 15° and 18°. The second fermentation in autoclave is long, lasting up to 5 weeks at a temperature of 13°-15°.
“Vigna del Cristo” Lambrusco di Sorbara is part of the exclusive line of sparkling wines by Cavicchioli. The color impresses with its very intense rosé, wrapped in a clear foam that tends towards a powder pink. The aromas are all tied to flowers and fruits that blend well together, creating a subtle and lively bouquet: violet and rose dance joyfully with blood orange and wild strawberries. On the palate, it is dry and energetic, with bursts of freshness and saltiness that do not make it cloying but give way to enjoyment and persistence. It is certainly a balanced sparkling wine that, with its simplicity, covers a wide range of culinary pairings: from elaborate first courses to red meats, fish, and even pizza.
