
Liquore Caffè de Olla Paranubes
The 'De Olla' Coffee Liqueur from Paranubes originates in Río Tuerto, in the Sierra Mazateca of Oaxaca. It is the modern reinterpretation of the Mexican café de olla, the traditional drink prepared over the fire with cinnamon and raw sugar. Here, the family of master distiller José Luís Carrera has been producing aguardiente de caña, that is Rum, for over a hundred years. José Luís himself also grows the coffee used for this label, which is lightly roasted, then cold-infused and combined with unaged Rum. In this base, local botanicals such as cinnamon, vanilla, and chili macerate for a month. The sweetness comes from the raw panela, artisanally cooked for twelve hours in copper pots. Before bottling, the liqueur rests briefly in oaxaqueña red clay containers, in homage to the tradition of café de olla. Toasted and spicy notes emerge on the nose, while on the palate the sweetness of the panela integrates with the enveloping warmth of sugarcane. A versatile label, to be enjoyed neat, on the rocks, or as a base for a spoon dessert
