With its powerful and articulate rums, the Mexican distillery Paranubes ranks among the national excellence in the production of this cane sugar distillate. Paranubes' sugarcane processing, managed by master distiller Jose Luis Carrera, is driven by a desire to capture and convey unfiltered the essence of its place of origin, namely the forests of the Sierra Mazateca mountains, located in the state of Oaxaca in southern Mexico. Here, rum is called "aguardiente de caña," meaning "cane distillate," and for 3 generations Jose Luis Carrera's family has been involved in the production of this product.
The Paranubes farm's sugarcane crops are located among the majestic uninhabited mountains of the Sierra Mazateca Mountains, in a lush cool but tropical climate that is also ideal for growing coffee and fruit. In the 14 hectares of the property, Jose Luis Carrera raises as many as four different varieties of sugar cane: Caña Dulce, Caña Morada or Negra, Caña Dura and Caña Amarilla or Criolla, with particular prevalence of the latter. All these varieties used in the production of rum are grown organically on fertile soils, without the use of pesticides and chemical fertilizers. The harvest is annual while the cane sugar process begins with the pressing of the mature plant and the subsequent spontaneous alcoholic fermentation of the juice in pine wood vats. Peculiar is the fact that Jose Luis distills only half the volume of the fermenting vat each day, so that by adding new juice the one already present will act as a fermentative inoculum. Through this technique the vats remain empty only 4 months of the year. Fermentation of a batch lasts approximately 48 hours, at the end of which the fermented juice is distilled in copper column stills. Along the entire process, the use of additives and water is strictly excluded.
Rum Paranubes may or may not be aged. In the first case we will have the 'Anejo' type, whose passage of 18 months in American oak barrels gives exceptional expressive depth; in the second case we will have the "base" rum, of greater accessibility and immediacy.
