The Pinot Noir from the Cantina di Caldaro is a characteristic red of the origin territory, vinified in steel and aged in large wooden barrels. Elegant aromas of red fruit such as cherry and raspberry accompany slightly spicy notes of cinnamon. On the palate, it enters bold and refined with a silky sip and soft, well-integrated tannins.
The Pinot Nero from Cantina di Caldaro aims to be a young interpretation, especially focused on the fresh and fragrant fruity notes, typical of the Burgundy grape when cultivated in a mountain terroir. It is an immediate red, with a pleasant expressive simplicity and a bouquet characterized mainly by floral nuances, small red berry fruits, and delicately spicy hints. The sip is of pleasant freshness, with still crunchy fruit and a finish on slightly savory notes.
The Pinot Nero wine from Cantina di Caldaro is produced with grapes from vineyards cultivated in hilly areas with an eastward exposure, located at an altitude between 450 and 550 meters above sea level. The ability to choose from the numerous plots of the vast heritage of vines managed by the Cantina in the Caldaro Lake area allows for the creation of harmonious and balanced wines every year. The cool climate and the very draining clay-limestone soils have proven perfect for a notoriously demanding grape like Pinot Nero. Fermentation takes place in stainless steel tanks at a controlled temperature of 23 °C, with a maceration period on the skins of only 8 days, to avoid too significant extractions. The wine rests for 5 months in large wooden barrels and in cement tanks, in order to preserve the primary aromas of the grape.
The Pinot Nero from Cantina di Caldaro, thanks to a short maceration with a delicate extraction and a refinement with a quick passage in wood, is perfect for enjoying the finesse and fruity freshness that can express the noble Burgundy grape. The wine has a bright ruby red color. The olfactory profile is delicate, with refined notes of small red berry fruits, raspberry, wild strawberries, currants, floral nuances, and spicy memories. On the palate, it is medium-bodied, with prominent fruit, a fine and elegant tannic structure, and a finish of great freshness.
