The Prosecco Valdobbiadene Superiore “Rive di Colbertaldo” by Val d’Oca is a sparkling wine with an excellent quality/price ratio. The quality is what the Venetian Cooperative seeks, which brings together almost 600 members over a vineyard area of 900 hectares, extending over the hills between Asolo and Conegliano. One of the key points that Val d’Oca focuses on is continuous updating and the use of new technologies to improve the production process, paying extreme attention to every single step, in order to guarantee wines of excellent craftsmanship. The Cooperative's research also involves the study and care of the packaging, with this nice and eye-catching bulged bottle featuring a label with vibrant colors.

The Prosecco di Valdobbiadene Superiore Extra Dry Val d’Oca is produced in the cru Rive di Colbertaldo. The Glera grapes are hand-harvested, with meticulous selection of the best bunches. In this area, the vineyards are located on soil characterized by clay, which also allows for proper drainage of rainwater. The subsequent the winemaking process takes place in steel tanks, following the steps of the Charmat Method, then with the second fermentation in tank. The refermentation, which takes place in autoclaves, is stopped when the sugar level is between 12 and 17 grams per liter.

When the Val d’Oca Prosecco Valdobbiadene Superiore “Rive di Colbertaldo” is uncorked and poured, its straw yellow color, not too intense but bright, is immediately noticeable. The perlage is fine and very persistent in the glass, from which very clear and distinctive aromas emerge, both floral, with wisteria and acacia, and fruity, linked to citrus, pears, and apples. The citrus notes are also found in the sip, which is full and above all fresh, balanced and pleasantly harmonious. The velvety softness and the final persistence make it appreciated with numerous dishes, from mushrooms to fish, to fresh cheeses. A sparkling wine that stands out and adds a certain liveliness on various occasions.
