The Raspato from the Umbrian winery Annesanti represents a refreshing and sincere sparkling white. Nestled among the hills of Terni, within the municipality of Arrone, this small artisanal production reality has contributed to the enhancement of viticulture in Valnerina, combining fundamental values such as spontaneity, tradition, and experimental research. The goal of Francesco Annesanti, a young and promising winemaker at the helm of the winery, is to offer genuine wines that speak the language of the terroir. Numerous labels are proposed, all intimately linked to the territory, constituting a total production of no more than 20,000 bottles per year.
Annesanti Bianco Raspato is made from white grapes sourced from clones of vines that have been recovered from the grandfather's vineyard and then reproduced through mass selection. The process involves white winemaking without contact with the skins and without the addition of sulfites, using only indigenous yeasts. The refermentation occurs in the bottle thanks to the use of frozen fresh must, whose naturally present sugars are transformed by the yeasts, producing foam.
To the eye, Annesanti's sparkling white Raspato expresses a slightly cloudy straw yellow color, with lively and fine effervescence. On the nose, it evokes hints of white-fleshed fruit and floral fragrances, which combine with sensations of yeast and bakery. Taste fresh, lively, and sparkling, remarkably easy to drink and light.
