The best bunches of Ribolla Gialla are hand-harvested at full ripeness and quickly brought to the winery to to maintain its integrity. The grapes are first destemmed and then softly pressed. After a cold decantation, the must is sent for fermentation in stainless steel tanks at a controlled temperature of 16°-18 °C. The wine matures on the lees in steel tanks with frequent bâtonnage, for a period of about six months and finishes aging with another 6 months in the bottle.
