ArtisanalThe Roero Arneis Bajaj is a fresh and mineral white wine from Piedmont, a sincere expression of Roero and its most important white grape variety, Arneis. On the nose, it opens with an intense bouquet of white flowers and yellow-fleshed fruit, while on the palate it is soft, intense, and characterized by a good acidity that refreshes the sip and invites you to take another. Excellent paired with white meats, fish, or vegetarian first courses.
The Roero Arneis from the family-run winery Bajaj is a label with a distinctly fruity and mineral aromatic profile, resulting from a so-called "subtractivist" production philosophy. This vision aims to eliminate all those unnecessary invasive oenological practices, such as filtration, clarification with non-natural products, the addition of impactful additives, and the use of selected yeasts. Instead, the goal is to work with the grapes, musts, and wines without sophistication, allowing the unique expression of the territory to shine through.
The Roero Arneis Bajaj is a 100% Arneis cultivated in the Gaiuccio vineyard, the largest on the estate, located within the municipality of Monteu Roero. Here, on soils primarily composed of white sand and limestone, the plants are cultivated following the principles of integrated pest management, aimed at rationalizing the use of plant protection treatments. After harvesting, the grapes are destemmed and then placed for 48 hours in pre-fermentation maceration in stainless steel tanks, followed by soft pressing and alcoholic fermentation of the must for about 10 days at controlled temperature, also in steel, initiated with a pied de cuve. After a few months of maturation, the wine is finally bottled.

On the nose, inviting aromas of yellow-fleshed fruit and white flowers are perceived, supported by mineral hints and aromatic herbs. The sip, intense and balanced, is characterized by pleasant softness and a tantalizing fresh-salty verve, as well as a persistent mineral and slightly herbaceous finish. This white wine shows exceptional versatility at the table in food-wine pairing, successfully accompanying dishes from both land and sea.
