'Hanami' by Cantine Fina is a Rosé produced with only Merlot grapes, a Trapani interpretation inspired by France. Fresh and elegant, it is a wine that surprises with its harmonious balance and its intense fruity aromas of peach, sour cherry, and grapefruit. It is suitable for pairing with raw fish and, in particular, sushi and sashimi!

 

The Rosato ‘Hanami’ by Cantine Fina represents a purely Sicilian interpretation of Merlot grapes in a pleasant and refreshing rosé guise. This Bordeaux-origin grape variety arrived in Sicily during the 1980s, immediately showing its remarkable adaptability. To enhance the freshness and fragrant aromas that characterize the type, Cantine Fina cultivates the grapes at very high altitudes, so that the berries benefit from a cooler microclimate and significant temperature excursions between day and night, factors that favor the accumulation of aromatic precursors and the preservation of organic acids.

‘Hanami’ Cantine Fina Rosato is a 100% Merlot from vines cultivated under certified organic farming in the territory of western central Sicily, at a height of 850 meters above sea level. Usually, in mid-August, the harvesting of the bunches takes place, which are then transferred to the winery where they are vinified into rosé using a particular stabilization process. This technique consists of placing the must in steel tanks filled with nitrogen, at a temperature between 0 and 1 °C, for about 15 days in contact with the suspended pulp. Followed by alcoholic fermentation in stainless steel tanks at controlled temperature for 8 days and then the aging phase of about 3 months on the fine lees, always in steel.

To the eye, the Rosato ‘Hanami’ by Cantine Fina shows a pale and bright pink color. The aromatic bouquet expresses graceful hints of peach, sour cherry, lychee, grapefruit, jasmine, and orange blossom, combined with vegetal notes of boxwood. On the palate, it is intense and fresh, with good balance and momentum, tasting attributes that make the Rosato ‘Hanami’ an ideal pairing with light fish dishes, such as mixed seafood appetizers, sushi, and sashimi.
