The Rosso “Petit Taureau” by Maison Padié originates in Languedoc Roussillon, precisely in Calce in the Agly Valley. The winery was founded by Jean-Philippe Padié in 2003 and has always followed a philosophy of fully respecting the ecosystem surrounding the vineyards, favoring cultivation first under organic and then biodynamic regimes, honoring the extraordinary complexity of the native grape varieties.
The vineyards of the Rosso “Petit Taureau” by Maison Padié grow on soils with a complex composition, as they contain limestone, schist sediments, and marl stone. The idea is to promote grassing between the rows, preferring the use of treatments made from herbal infusions extracted from wild herbs, a homeopathic use of sulfites, and mini-quantities of sulfur, thus respecting the ecosystem surrounding the vineyards. The grapes are harvested by hand, and in the winery, ample space is given to spontaneous fermentation with indigenous yeasts. Before bottling, a refinement of a few months in steel and cement.
To the eye, the Rosso “Petit Taureau” by Maison Padié presents itself as ruby red with bright and intense reflections. The bouquet of aromas recalls red forest fruits, violets, and delicate spicy notes; on the palate, it is characterized by soft and well-integrated tannins with a balanced and curious finish. It is recommended to pair with grilled red meat dishes and first courses with rich sauces; also interesting with savory pies made from seasonal vegetables.
