Rum 'Baroko' Don Papa

The Rum “Baroko” is a label produced by the brand Don Papa. It is a reality from the Philippines, which has built its success on the ancient tradition of sugarcane cultivation. In fact, while in the Caribbean the plant was brought by the Conquistadors, in the Philippines it has always been present. The “Baroko” is a Rum born from the lush and fertile land of the Philippines. The Don Papa distillery is located on the island of Negros and in about ten years, it has established itself as one of the most interesting novelties in the global spirits scene. At the base of the Rum is a quality of sugarcane among the best in the world, cultivated in the ideal climate and on mineral-rich soils, generated by the disintegrationof the ancient lava flows of the nearby volcano of Monte Kanloan. The cane is cut and worked by hand, in order to extract a fragrant and dense molasses of very sweet aromas. The raw material is then fermented and the subsequent distillation phase is carried out in traditional copper stills. The rich distillate matures for a long time in high-toasted American oak barrels, previously used for aging Bourbon. Before bottling, a pinch of cane sugar is added to the Rum, to make its profile softer and sweeter.
