Chateau Calon's Saint-Emilion "St Georges" is a Bordeaux that embodies the elegance and complexity of the Bordeaux 'rive droite'. The grapes are harvested on the soils of Saint Georges, a unique area characterized by clay and limestone soils, which impart great structure and a distinctive mineral character. Chateau Calon Saint-Georges-Saint-Emilion is a Bordeaux red wine with a enveloping and concentrated taste that originates from the small production area of St-Georges-St-Emilion, one of the four so-called "satellite denominations" of the more famous AOC of Saint-Emilion. The varietal base of this bottle is represented by the four traditional Bordeaux grape varieties Cabernet Franc, Cabernet Sauvignon, Malbec, and, above all, Merlot, a variety that yields the best results on the right bank of Bordeaux. Not surprisingly, Merlot alone accounts for as much as 75% of the total vineyard area of the St-Georges-St-Emilion denomination.
The Saint-Georges-Saint-Emilion from Chateau Calon derives from a solid base of 80% Merlot, combined with 10% Cabernet Franc, 9% Cabernet Sauvignon, and just 1% Malbec. These varieties are planted on particularly rich clayey draining soils, in the characteristic temperate oceanic climate with continental influences. Following the manual harvest of the grapes, alcoholic fermentation takes place in stainless steel tanksat controlled temperature, associated with a prolonged contact between the must and the skins. The subsequent aging process takes place in French oak barriques, with a variable percentage of new wood, and lasts for 18 months until the final bottling.
In the glass, Chateau Calon Saint-Georges-Saint-Emilion reveals an intense ruby red color. On the nose, intense aromas of blueberry, cherry, and underbrush emerge, surrounded by spicy sensations of tobacco and vanilla. Warm and full-bodied on the palate, very fragrant and persistent, with a velvety tannic texture that is accompanied by fresh balsamic perceptions on the finish. Due to its significant structure, this Bordeaux red wine requires important pairings such as main courses based on red meats or game.
