Junmai Ginjo “Bijito” by Kizakura is a Sake made following the standards of the Junmai style, that is, without any addition of alcohol during the processing, which involves the use of pure and crystalline water, sourced from local springs. The raw material is the precious rice of the Japanese sakamai variety, traditionally used only for the production of Sake. It is characterized by larger and softer grains, which are processed with a careful polishing process of 60-70%, ensuring great expressive finesse and excellent water absorption during the shinseki phase. To water and rice, only two other ingredients are added: the yeasts of the Saccharomyces cerevisiae strain, capable of working at low temperatures, and koji (Aspergillus oryzae), a fungus that promotes the transformation of starch into sugar for fermentation.
