The Salice Salentino Reserve combines in a blend the Negroamaro with 15% Malvasia Nera. Both grape varieties grow in vineyards with an average age of about 50 years, trained in bush form with very low yields, never exceeding 50 quintals per hectare. The grapes, carefully selected during the harvest, are picked dried, and once in the winery, they macerate for 14 days, fermenting alcoholically in 500-hectoliter rotary fermenters. Malolactic fermentation takes place in barriques, where the wine then ages for 9 months before being bottled.
Due Palme "Selvarossa" is a Salice Salentino Reserve that in the glass reveals an intense ruby red color. The nose is a continuous march of different aromas, where from spirit-soaked fruit it moves to sweet spices, also crossing more Mediterranean notes. On the palate, it is very energetic and warm, with a well-orchestrated sip thanks to integrated tannins and a noticeable acidic backbone.
