The Casa Caterina Sparkling Wine ‘Vertical’ Classic Method Dosage Zero is a Blanc de Blancs sinuous and classy. The Brescia winery Casa Caterina, founded in the 1980s, is now represented by brothers Aurelio and Emilio Del Bono, who, through passion and continuous commitment, have gradually shaped one of the Italian wine realities of excellence regarding the production of Classic Method sparkling wines. The fact that they have built one of the reference sparkling houses in Lombardy without resorting to shortcuts, but rather undertaking the more arduous path by renouncing illustrious denominations and embracing the biodynamic production philosophy, is an additional point in favor of the Del Bono family.

‘Vertical’ Classic Method Sparkling Wine Dosage Zero by Casa Caterina is made from white grapes, grown on clay-limestone soils according to the principles of biodynamic agriculture. The grapes, hand-harvested and carefully selected, are softly pressed and the must is spontaneously fermented 10% in oak barrels and 90% in stainless steel tanks. The refermentation takes place in the bottle according to the Champenoise Method, using as tirage syrup the fresh must from the same harvest.

The Classic Method Sparkling Wine ‘Vertical’ Casa Caterina Dosage Zero is dressed in intense straw yellow, with an elegant bubble. The intense and articulated olfactory mosaic consists of floral sensations and ripe fruit, adorned with hints of small pastries. The tasting confirms its breadth and charge, with a soft creaminess supported by vibrant freshness. The finish is long and marked by a savory note.
