Due Palme cultivates it with great care, harvesting it at the end of August to preserve its freshness in every berry. The bunches, carefully selected during the harvest phase, are destemmed, and the best berries are sent for pressing. A brief maceration of the skins follows.with the must, and fermentation takes place in stainless steel tanks. The second fermentation takes place in autoclave, following the principles of the Martinotti or Charmat Method, and finally the wine is ready to be bottled.
