Spumante Rosé Metodo Classico 'Levis' Cherubini

The winemaker Mattia Corbellini from the Brescia winery Cherubini introduces the Spumante Metodo Classico Rosé Nature ‘Levis’, a high-class artisanal sparkling wine made exclusively from Pinot Nero grapes. Mattia adopts a genuine and sustainable production approach both in the vineyard and in the winery, not using any pesticides or chemical herbicides in the vineyards and minimizing winemaking interventions in the cellar, with the delicate sparkling wine production operations carried out manually.

The Spumante Rosé Nature Metodo Classico ‘Levis’ from Cherubini is a pure Pinot Nero from vines grown among the Brescia hills on clay-limestone soils. Following the manual harvest and subsequent destemming, the grapes are macerated for 6 hours, after which they undergo gentle pressing followed by spontaneous alcoholic fermentation in concrete tanks for about 20 days. Once the fermentation process is completed, the mass spends a few more months in concrete and is finally bottled for the sparkling process according to the Metodo Classico, with at least 46 months of aging on the yeasts. After disgorgement, the bottles are filled with the same wine, without any exogenous additions. Throughout the entire process, the sparkling base is not subjected to clarification and filtration operations.

The Metodo Classico ‘Levis’ Spumante Nature Rosé from the artisanal winery Cherubini has a pale pink hue with fine and persistent bubbles. Original and deep, the aromatic spectrum features scents of red fruits, rose petals, and nutmeg that blend with light smoky hints of tobacco. Excellent balance on the palate between the soft creaminess, the taut freshness, and the pronounced mineral character that create a rich and elegant combination.
