The Vermentino by Piero Mancini is a white wine from Sardinia with a fresh and light sip that is aged only in steel. The Vermentino by Piero Mancini is a white wine produced with this grape variety which, besides being present in many European areas, has found in Sardinia an important stage where it is the main protagonist. We are in Gallura, not far from Olbia, a place where the vineyards benefit from the influence of a breeze that brings relief during the hot Sardinian summers. Moreover, it is a place where the strong temperature variation between day and night allows the fruits to evolve aromatically throughout the season.

Piero Mancini cultivates the Vermentino vineyards in soils formed from granite disintegration, characterized by excellent drainage and an exceptional richness in mineral salts, especially potassium. Grown at an altitude ranging from 100 to 500 meters above sea level, the Vermentino, after being harvested, is taken and processed inside the winery. In this place, fermentation is awaited, which takes place in temperature-controlled steel tanks, the same material in which the wine will continue to mature for a few months.

The Vermentino from the Piero Mancini winery colors the glass with a straw yellow with greenish reflections, timid marine notes anticipate aromas of thyme and sage that envelop the nostrils along with scents of white fruit such as pear and peach. The taste is dry and has an elegant and enveloping texture. Vibrant and straightforward drink thanks to a freshness that makes the sip pleasantly persistent with a distinct bitter almond finish. This interpretation of Vermentino is ideal when paired with delicate dishes, and if we want to find a territorial pairing, we can lean towards the traditional Gallurese fish soup or some wonderful spaghetti with sea urchins.
