The Alta Langa Rosé Brut by Cascina Pastori Colombo is a sparkling wine made from pure Pinot Noir grapes. A resting period of 30 months on the lees enriches its naturally fruity bouquet with more mineral and vegetal notes, with talc and powder as a backdrop. The Alta Langa Sparkling Wine is a rosé that Cascina Pastori Colombo produces starting from the pure use of Pinot Nero grapes. The vines grow using the guyot system in Bubbio, in the province of Asti, at an altitude of about 250 meters above sea level, and are 10 years old. The must obtained from pressing the grapes ferments in steel tanks at low temperatures – between 12 and 13 degrees – and then referments following the principles of the Method Classic in the bottle. The Sparkling Wine then remains to age on the lees for a total period of five years.
The Alta Langa Sparkling Rosé Cascina Pastori Colombo presents itself to the eye with a color reminiscent of onion skin, crossed by a grain of fine and persistent bubbles. The small forest fruits dominate the olfactory scene, then continuing to express different delicate floral nuances. On the palate, it has excellent body, with a sip that develops with balance thanks to a fresh and enveloping sip, at the end of which a floral flavor appears that reflects the consistency between mouth and nose.
