
'Cabernetico' Tenuta Saiano 2022

Organic and biodynamicThe "Cabernetico" of Tenuta Saiano is a Cabernet Sauvignon with a young imprint. A wine with a smooth drink, supported by fresh Mediterranean aromas and notes of black olive. Made by carbonic maceration, the grapes undergo a slight crushing after five days. On the twentieth day of maceration in whole clusters the must is separated and continues fermentation for indigenous yeasts. A part of the aging is done in old barriques.
On the Romagna side of the Valmarecchia, the ‘Cabernetico’ by Tenuta Saiano is born, a dynamic and juicy interpretation of the famous international grape variety Cabernet Sauvignon. The Tenuta Saiano winery follows the principles of organic farming, excluding the use of synthetic chemical products, using self-produced manure for fertilization, and adopting practices such as green manuring, an agricultural technique aimed at enhancing the natural fertility of the soil through the burial of specific crops.
Tenuta Saiano ‘Cabernetico’ is a 100% Cabernet Sauvignon grown according to the principles of certified organic farming on soils rich in limestone, clay, and sandstone, with streaks of gypsum. The grapes are hand-picked with particular attention to avoid damage and are then placed whole in carbonic maceration for a few days, with the alcoholic fermentation initiated exclusively by the yeasts present on the berries and in the winery environment. With the must still in full fermentation, a light pressing is then carried out, followed by 20 days of skin maceration. The aging of a few months takes place for 25% of the mass in used barriques and for the remaining 75% in steel tanks, at the end of which the wine is bottled without undergoing any filtration.
The Romagna Cabernet Sauvignon ‘Cabernetico’ by Tenuta Saiano has a bright garnet red color. On the nose, aromas of black olive and red fruits alternate with suggestive Mediterranean perceptions. Fresh, lively, and smooth on the palate, with a notable mineral imprint and gentle tannins. The ‘Cabernetico’ pairs wonderfully with various meats seasoned with aromatic herbs or with rabbit alla cacciatora.
