With Calvados Pays d'Auge 12 Years, we begin the "ascent" towards the peak of the aging processes foreseen by the Roger Groult distillery. A bottle that presents itself as the perfect compromise between the richness of fruit typical of younger Calvados and the complexity of bottles that undergo a long aging process, representing a reliable choice. The production is characterized by a highly artisanal profile, while the raw material, cultivated directly by the distillery's owner, ensures a "km 0" supply chain of great quality. A perfect label to brighten up the more tranquil after-dinner moments, those where sips flow slowly, making their way through words and conversations.
The Pays d'Auge Calvados 12 Years is made by Roger Groult starting from the main ingredient, apples. Jean Roger, the owner of the distillery, is not only involved in managing production operations but also dedicates himself personally to the cultivation of the 23 hectares of land where 5,300 apple trees grow, grouped into as many as 30 different varieties, from which the fruits necessary for the production of Calvados are obtained. After harvesting, the apples are pressed and processed to obtain a sweet must. We then proceed with a double distillation, carried out using very old small stills. Once the Calvados is obtained, it is transferred into oak barrels for a total of 12 years.
The Roger Groult Calvados Pays d'Auge 12 Years develops in the glass with a bright yellow color, crossed by some slight reflections tending more towards amber. The nose is concentrated, telling a mainly floral olfactory story, later enriched by a reference to well-ripened, sweet fruit. On the palate, it is full-bodied, with a dense and full sip, characterized by a fruity and spicy imprint. A label that confirms the excellent reputation of Roger Groult's production, a strictly family-run production reality that, for two centuries, has been introducing the world to the quality of its Calvados.
