Chablis "Vaillons" by Joseph Drouhin is born from one of the famous Premier Cru of the territory and it is produced with vinification only in steel tanks. It is a very taut, clear-cut, fresh and sharp white wine, with saline nuances and aromatic hints of lemon peel, wild flowers and iodine. To cellar it for some years!

The Chablis Premier Cru “Vaillons” by Joseph Drouhin is produced from grapes sourced from one of the most renowned Premier Crus of the estate, always known for the high quality of its wines. It is a pure Chardonnay that highlights the best characteristics of Chablis wines, known and appreciated by the most refined palates for their unparalleled elegance, the vertical mineral freshness, and the delicate and subtle aromatic persistence. This is an important label to be enjoyed on a special occasion, to accompany a sophisticated and refined seafood menu.

The Chablis “Vaillons” originates from one of the most important estates in Burgundy. Joseph Drouhin, in addition to owning parcels in the best crus of the Côte d’Or and Côte Chalonnaise, also cultivates significant plots within the Appellation Chablis. The “Vaillons” vineyard is located near the town of Chablis, on the first slopes of the southwest. It is part of the exclusive circle of the 7 Premier Crus, thanks to its magnificent sunny exposure and the presence of particularly suited limestone soils, which produce wines of great elegance and typicity. The soils of Chablis have an ancient marine origin and consist of fossil shells that have deposited and sedimented over millennia. It is these soils and the cold climate of the region that allow Chardonnay to mature slowly, with a particularly fine and delicate aromatic profile.

The Premier Cru “Vaillons” Chablis from Domaine Joseph Drouhin comes from one of the best old vineyards of the estate. At the end of the manual harvest, the grapes are gently pressed, and the must is started on a slow fermentation in stainless steel tanks. The wine then matures in steel for 7/8 months before being bottled. In the glass, it has a straw yellow color with greenish reflections. The aromatic profile reveals notes of citrus, lime, floral hints, herbal nuances, and marine and iodine touches. The palate is tense and vertical, with a savory and energetic mouthfeel that extends decisively towards a finish of lively citrus freshness. It is a great white wine, dedicated to those who appreciate subtle and refined wines.
