The Champagne is the result of the patient and careful work of a Maison de Récoltant Manipulant that cultivates the vineyards with great love for the land and follows rigorous artisanal practices. The typical floral, citrus, and fruity notes of the grape variety are enhanced by iodized, savory, and chalky sensations typical of the best Grand Cru of the Côte des Blancs. The delicate and elegant character of the bouquet suggests tasting at the time of the aperitif or paired with seafood appetizers.

The Extra Brut Blanc de Blancs Grand Cru is a Champagne from the Maison Sébastien Daviaux, a typical family-run business that has been cultivating vines in the prestigious terroirs of the Côte des Blancs for several generations. The vineyards are located in Chouilly, Cramant, and Cuis and are managed with extreme care, following the agronomic protocol of Viticulture Durable en Champagne (VDC). The cuvée is made with Chardonnay grapes from vineyards located in the municipalities of the Grand Cru of Chouilly and Cramant, characterized by the presence of soils composed of deep layers of exposed gypsum. The grapes are pressed very gently and the must ferments in stainless steel tanks at controlled temperature. After a short aging with malolactic fermentation, the base wines of the vintage are blended with a percentage of 45% of reserve wines from the two previous years, which contribute to giving maturity and complexity. The second fermentation takes place in the bottle according to the Méthode Champenoise with a resting on the lees of about 30 months before disgorgement.
