The Champagne Brut Grand Cru d'Aÿ Gaston Chiquet is produced with pure Chardonnay and matures on the lees for as long as 84 months. It is a Blanc de Blancs of great finesse and elegance with a mature and evolved bouquet, expressing floral scents, citrus aromas, yellow fruit, hints of bread crust, and dried fruit. The sip is intense and satisfying, aromatically rich and persistent, finishing with beautiful fresh and mineral notes.
The Blanc de Blancs Grand Cru d'Aÿ is a vintage produced by the Maison Gaston Chiquet, which manages a vineyard of 23 hectares divided into various plots located in particularly prestigious areas: in Aÿ, in the zones of "Vauzelles" and "Hauts-Crohauts"; in Dizy, in the localities "Crohauts-Guillemoine", "Cerisières", "Sous-Chienne", and "Moque-Bouteille"; in Hautvillers, in the parcels of "La Grange de Dizy" and "Le Colombier". The vines have an average age of about 20-30 years and for the Grand Cru d'Aÿ label, a selection of Chardonnay grapes from the fine Grand Cru classified parcels of "Vauzelles" and "Hauts-Crohauts" characterized by a calcareous-clay soil rich in gypsum is used. All the vines are vinified separately and the grapes are pressed using "champenois" presses, to delicately extract only the free-run juice. Fermentations take place in small stainless steel tanks of 40-60 hectoliters, with temperature control and the use of selected yeasts. Once fermentation is complete, the vins clairs always undergo malolactic fermentation and then rest for a few months until the moment of creating the cuvée. After a series of careful tastings of all the base wines, the blending is created and the second fermentation takes place in the bottle, according to the Champenoise Method with a long aging on the lees of at least 84 months.
