‘La Closerie &’ Champagne Extra Brut is the creation of Jerome Prevost, a talented vigneron who is rewriting the standards of elegance and complexity of Pinot Meunier. It is a generous and complex Champagne crafted according to a rigorous style. Jerome Prevost's adventure began in 1987, the year when the vigneron, then just twenty-one years old, inherited from his family a small plot of two hectares planted almost exclusively with Meunier. After years spent selling the cultivated grapes, it was the renowned producer Anselme Selosse who sensed the potential of the young Prevost and his vineyards, encouraging him to embark on an independent path. The label ‘La Closerie &’ follows the Négociant project undertaken by Jerome in 2017 to keep the possibility of purchasing grapes in case of complicated vintages.
The Champagne Extra Brut ‘La Closerie &’ by Jerome Prevost originates from only Pinot Meunier grapes grown in the Montagne de Reims on predominantly sandy soils rich in limestone. The harvest is carried out by hand exclusively when the grapes have reached full ripeness and the grapes are then vinified in white through soft pressing and spontaneous alcoholic fermentation in small French oak barrels. After a few months of maturation, the vintage wine is combined with about 20% of vin de reserve from the previous vintage and the sparkling base is then bottled and added with liqueur de tirage for refermentation according to the Champenoise Method. Once the sur lie aging is completed, the degorgement and subsequent dosage Extra Brut are finally carried out.
The color of Champagne ‘La Closerie &’ Extra Brut by Jerome Prevost is bright golden yellow with a fine and persistent perlage. Intense aromatic bouquet with hints of pear and red apple that meet sensations of dried fruit and bakery. Full-bodied, broad, and savory on the palate, extremely long and of exceptional balance.
