It is not easy to reinvent a consolidated production method, but that is what Anselme has done with incredible results that have soon been imitated. The search for oxidation as a virtuous element, the rigorous application of biodynamics in the vineyard, the practically nonexistent doses of sulfur, and the very long aging on the lees. The Extra Brut Le Bout Du Clos is one of Selosse's lieux dits, meaning a wine produced from grapes of a single parcel, in this case pure Pinot Noir from the historic commune of Ambonnay. Vines cultivated under strict biodynamic practices, with manual harvesting of the grapes at full ripeness. In the cellar continues with the blending of the base wines according to the Soleras method, thus combining liquids from different vintages, and then the refermentation in the bottle begins. The aging involves a stay on the lees of about 6 years and an extremely low dosage between 0 and 2 g/l. Production of about 2000 bottles for this small pearl.
The Champagne Bout Du Clos fills the glass with its golden yellow hue, of great intensity and an extremely fine and persistent bubble. Explosive and lively, from the very first sniff, it unfolds a nose made of crunchy red fruit, blood orange, hawthorn, and wildflower honey. A well-defined generosity, for a nectar sunny and joyful. Incredible sip for its ability to combine the fullness of pulp with a more jovial and juicy aspect, attributable to the freshness and salinity that are always present and integrated. The latter then carries the liquid into a intensely long and persistent finish. Yet another masterful interpretation by the master Anselme. Irresistible.
