The Champagne Extra Brut Grand Cru Millésimé from the iconic champenoise winery Jacques Selosse is a sparkling wine of rare prestige and complexity, resulting from a single fine vintage. Rather than selecting the best barrels from each lieu-dit, for the production of his vintage, Guillaume Selosse, son of Anselme and grandson of Jacques, prefers to choose the barrels containing the wines of greater personality. Guillaume has inherited the same meticulous attention and talent of his father, one of the most appreciated and celebrated vigneron in the modern history of Champagne.
The Grand Cru Champagne Jacques Selosse Extra Brut Millésimé is made from a combination of Chardonnay and Pinot Noir grapes cultivated according to biodynamic principles within parcels classified as Grand Cru, all characterized by chalky soils. The grapes from the single vintage are hand-picked and vinified in white in oak barrels through gentle pressing and spontaneous alcoholic fermentation. After a maturation period in the same type of containers,of wine containers, the liquid is placed in a bottle and added with liqueur de tirage for the sparkling process according to the Champenoise Method, associated with about 10 long years of aging sur lattes. The processes of degorgement and topping up the bottles with the same wine follow, without any dosage.
In the glass, the Champagne Grand Cru Millésimé Jaques Selosse Extra Brut reveals a golden yellow hue and an elegant perlage. The olfactory panorama is vast and seductive, defined by hints of ripe fruit, candied citrus, white flowers, and aromatic herbs, enriched by toasted notes and delicate oxidative touches. On the palate, it is soft and creamy, with a brilliant fresh-salty verve accompanying the persistent mineral finish.
