Chavost's Champagne Nature Blanc D'Assemblage is produced in France, in the picturesque Champagne region. An appreciated expression of the terroir of the Vallée de la Marne and the winery Chavost's responsible viticulture, this Champagne is made from Chardonnay, Meunier and, to a small extent, Pinot Noir grapes. Flowing and well-balanced, it acquires, after an ageing on the lees for 24 months, notes of red fruits, citrus fruits, white flowers and hints of butter and toasted bread. Ideal for a refined aperitif!

The Champagne Chavost Blanc d’Assemblage Brut Nature represents an expression of the territory of the Vallée de la Marne with a refined and balanced style. This bottle is part of the selection ‘Et sans sulfites ajoutes!’, literally “and without added sulfites!”, a premium range that highlights the skill of chef de cave Fabian Daviaux, who vinifies these Champagnes without the use of sulfur from grapes sourced from a selected plot of 5 hectares. Furthermore, starting from the 2023 vintage, the plot has obtained organic certification, a testament to the sustainable approach on which the winery's production vision is based.

The Blanc d’Assemblage Brut Nature Champagne Chavost consists of an equivalent blend of Chardonnay and Pinot Meunier, to which 6% of Pinot Noir is added. The grapes come from a vineyard planted on clay-limestone soils with a northern exposure, managed under organic practices. After the harvest, carried out by hand when the berries have reached optimal ripeness, the clusters undergo soft pressing followed by alcoholic fermentation of the must,for 70% of the mass in temperature-controlled stainless steel tanks and for the remaining 30% in oak barriques. The vintage wine is then blended with a percentage of vin de reserve before the second fermentation in the bottle according to the Champenoise Method, associated with at least 24 months of aging on the lees. This is followed by degorgement and topping up with the same wine, thus without dosage. During the entire process, the addition of sulfites is excluded.

The Champagne Brut Nature Blanc d’Assemblage by Chavost has a straw yellow color with fine bubbles. The nose reveals aromas of green apple, red fruits, fresh citrus, white flowers, and almond, enriched by hints of butter and toasted bread. Balanced and elegant sip, characterized by excellent softness and a smooth, clean finish.
