“Pale and Dry” Cognac XO Delamain is born in a Maison that boasts an ancient history. In the mid-‘700s, James Delamain, of Irish origins, began trading in wines and Cognac in Jarnac. The distillery was founded in 1824 and in 1920 the Pale & Dry version was born, a true icon of the brand. Today the Maison belongs to Bollinger, but has preserved intact the wealth of knowledge and experience that has made it famous over the centuries. The production process is still inspired by ancient artisanal practices. The Cognac is made only with base wines from the best vineyards of Grande Champagne. After distillation, the Cognac matures for at least 6 years in old oak barrels within the ancient cellars of the Maison, under ideal temperature and humidity conditions for perfect and slow aromatic evolution.
