The Etna Bianco by Tornatore is a pure Carricante, expressing the best characteristics of this indigenous white grape variety, which has been present on the volcanic soils of Etna for centuries. The vineyards are cultivated on the northern side of the volcano and produce a white wine characterized by great freshness and sapidity, with delicate citrus notes, hints of Mediterranean scrub herbs, and the characteristic mineral sensations of the lava territories.
The Etna Bianco wine is produced with grapes harvested from vineyards located at an altitude of about 650 meters above sea level, in the territory of the municipality of Castiglione di Sicilia with a northern exposure. The vines are cultivated using the spurred cordon method on terraces of volcanic sands, with a yield per hectare that does not exceed 70 quintals. After manual harvesting, the grapes are quickly transported to the winery and undergo a sorting on a conveyor belt. This is followed by destemming and soft pressing, to extract only the free-run juice, which is clarified cold and started to ferment at a controlled temperature of 15/16 °C. The wine matures on the fine lees in steel and cement tanks for a period of 5/6 months before being bottled.
The Etna Bianco is the wine from Cantina Tornatore that best represents the characteristics of Carricante. This historic Sicilian grape variety, thanks to aging in steel and cement, indeed preserves all its exuberant freshness and its delicate and characteristic aromatic profile. In the glass, it presents a pale straw yellow color with greenish reflections. On the nose, it expresses subtle and elegant aromas of green apple, citrus, white peach, Mediterranean scrub herbs, and iodized sensations. On the palate, it opens with vibrant freshness, citrus aromas, savory and mineral sensations.
