The Fiano "Don Chisciotte" by Zampaglione is a macerated white wine of good intensity and persistence that ages in steel. The aromas evoke sweet yellow fruit and mountain herbs with small menthol notes. On the palate, it is enveloping and mineral, fleshy and fresh.

The Don Chisciotte by Zampaglione is a clear expression of Fiano from Irpinia, sumptuous synthesis of pulp and minerality. The name of the Zampaglione family is indissolubly linked to the production of liquids with a high emotional charge, an example of wines produced respectfully, ensuring that the vineyard and grape varieties are simple interpreters of the territory. Guido in Alessandria, with his now famous Tenuta Grillo, and Pierluigi in Calitri, in the heart of Irpinia, where Fiano finds its chosen homeland. A few hectares cultivated without the aid of chemicals or synthetic substances, and macerations on the skins more or less brief depending on the vintages. Always unique pieces.

The white Don Chisciotte is obtained from pure Fiano grapes, with vineyards cultivated at about 800 meters above sea level on clay and volcanic soils. Healthy grapes, as only copper and a bit of sulfur are used in the vineyard, which are harvested manually when fully ripe. After destemming and crushing of the bunches, spontaneous fermentation begins in steel containers, with skin maceration of about 10 days. The liquid then matures for a few months in steel before bottling.

The wine Don Chisciotte fills the glass with its golden robe of great intensity. It shows itself sparkling and explosive from the first sniff, alternating notes such as grated lime zest, chestnut, and white flowers, with more territorial notes that refer to flint stone being rubbed. It is a liquid all played on finesse and sapidity, also a sign of a wise use of maceration, which gives depth without weighing it down. It stretches out very gracefully thanks to its refined salty texture. Sinuous.
